Ingredients
- 2 flatbreads (store-bought is fine)
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 peaches pitted & cut into 1/4-inch wedges
- 3 ounces brie cheese
- 1/4 cup red onion thinly sliced
- 2 tablespoon fresh basil thinly sliced (chiffonade)
- 2 tablespoons balsamic glaze (plus more if desired)
Instructions
-
Heat grill to medium heat. (I prefer a gas grill for this recipe, but a grill pan would work too.)
-
Brush one side of the flatbread with 1/2 to 1 tablespoon olive oil, just enough to lightly coat it. Place flatbread on the grill the and cook for 2-3 minutes until lightly browned. Remove and place cooked side up.
-
Top the flatbread with pieces of brie, peaches, and onion arranging them evenly over the flatbread. Season with and pepper.
-
Place the flatbread back on the grill and cook another 2-3 minutes until the crust is lightly browned and the cheese is melty.
-
Remove from the grill and transfer to a cutting board. Top the flatbread with basil and drizzle with balsamic glaze.
